Passion Fruit Cream Cupcake - Cupcake à la crème passion




  Passion fruit is my favorite fruit besides raspberry. I love these cupcakes & the passion cream added a delicate taste to the cupcake that makes it special .

Passion fruit cupcakes - Cupcakes à la crème passion
A recipe of Johanna Farrow

Ingredients for 12 cupcakes

150g butter softened
150g powdered sugar
3 eggs
1 tsp vanilla essence
150g self-raising flour
12 cupcake wrappers

For frosting
4 passion fruit pulp
150ml thick cream (crème fraîche)
100g icing sugar

Directions:

1) Preheat oven to 180°C.



2) Beat butter sugar, eggs, flour & vanilla essence till combined.

3) Line 12 cupcake wrapper on cupcake pan. Spoon in batter into prepared cupcake wrappers. Bake for 20- 25 minutes till golden brown. Let to cool.


4) Spoon the pulp of 2 passion fruit into thick cream and beat together with 1 tbsp of sugar till combined.


5) For frosting, beat icing sugar with pulp of 2 passion fruits till smooth.

6) Remove cupcake liner from cupcake. Slice cake horizontally in half & spread with passion fruit cream. Topped with passion fruit frosting.

  4. I really wish that passion fruit was easier to come by here. I do enjoy the taste of them in baked goods. Your cupcakes here have all the makings of one delicious treat! As usual, your presentation is stunning!

    1. Thanks Tina. Ya, sometimes it's quite difficult to find certain exotic fruits especially when it's not the season. But I find that passion fruit is quite easy to come by than lychee.

  11. they look lovely!! I can't even choose a favourite fruit. I have too many. You kno what, I actually have not tried passionfruit before except in smoothes or yogurt etc, i.e. as a flavour. yes, even though I grew up in a tropical country! I want to try the fresh one definitely!

    1. Thanks Shu Han! I can't believe that you've never try passion fruit before. But to tell the truth I don't eat that many passion fruit either during my childhood in Asia. It's kind of difficult to come by actually. But do try it out & you'll be amaze, unless you don't like soury taste! :)
