Easter Bird Nest Cupcakes

Easter Vanilla Bird Nest Cupcakes

Ingredients for 12 cupcakes

350g flour sifted together with baking powder
10g baking powder
4 eggs
200g soften butter
180g sugar
250 ml milk
1 tsp vanilla extract or 1 vanilla pod

Chocolate whipped cream
250 ml single cream/ liquid cream
2 tbsp cocoa powder
20g powdered sugar
Colorful candy eggs

Directions:
1) Preheat oven to 180°C.

2) Beat butter & sugar till creamy. Gradually add in eggs & keep on beating.

3) Fold in flour, baking powder & vanilla extract or vanilla beans till well combined. Add in milk & fold till all combined.


4) Line 12 cupcake wrapper on cupcake pan. Spoon in batter into prepared cupcake wrappers. Bake for 20 minutes till golden brown. Let to cool.

For chocolate whipped cream:
5) Whipped single cream till fluffy . Gradually spoon in powdered sugar , cocoa powder & keep on whisking till soft peak. Spoon in piping bag & with a small round tip, pipe them in free style around the cupcakes. Topped with few candy eggs.

  9. Oh I thought you made this because the Easter holidays is coming! Anyway, recipes never die! I've made a simple chocolate dessert today but haven't posted yet.It's becoz Easter holiday is just around the corner & everywhere we go, we will see chocolate eggs everywhere!

    I like the way you presented the cupcakes on the 2-tier cake carrier!

    Your recipe sound great, will try it out later when my schedule not so tight. Making nyonya achar now and half way busybody in cyber world again. LOL

    P/S When free you check my old posting egg mayo with potatoes, oreo bread, oreo butter cake, chocolate cheese cake your boys sure love it. Then they will tell you no need to cook lunch for them. LOL

  12. In looking at this I am ready to bring an Easter basket to your place to be filled with those delicious cupcakes. Seeing this does make me wonder why most people fill Easter baskets with store bought candy! These were decorated so skillfully-well done.
