Coca-Cola Cake

A letter from his friend, Captain Harville, having found him out at last, had brought intelligence of Captain Harville's being settled with his family at Lyme for the winter; of their being therefore, quite unknowingly, within twenty miles of each other.  Captain Harville had never been in good health since a severe wound which he received two years before, and Captain Wentworth's anxiety to see him had determined him to go immediately to Lyme.  He had been there for four-and-twenty hours.  His acquittal was complete, his friendship warmly honoured, a lively interest excited for his friend, and his description of the fine country about Lyme so feelingly attended to by the party, that an earnest desire to see Lyme themselves, and a project for going thither was the consequence.
The young people were all wild to see Lyme.  Captain Wentworth talked of going there again himself, it was only seventeen miles from Uppercross; though November, the weather was by no means bad; and, in short, Louisa, who was the most eager of the eager, having formed the resolution to go, and besides the pleasure of doing as she liked, being now armed with the idea of merit in maintaining her own way, bore down all the wishes of her father and mother for putting it off till summer; and to Lyme they were to go--Charles, Mary, Anne, Henrietta, Louisa, and Captain Wentworth.




Coca – Cola Cake
Source from Warren Brown’s cookbook – United Cakes Of America

Ingredients:
2 cups flour
170g butter
3 tbsp  cocoa powder
1-1/2 cup of marshmallows
1 cup Coca–cola
¼ milk
2 cup of sugar ( I only added 1 cup)
2 eggs
2 x 20cm cake pans
1 packet of Coca-Cola candies

For frosting:
Whipped cream or 250ml liquid cream
3 tbsp cocoa powder
3 tbsp icing sugar
200g dark chocolate
80g butter

Directions:

1)      Preheats oven to 180°C & greased the 2 cake pans.

2)      Sift flour & cocoa powder. Add in salt & marshmallows.& stir well. Combine milk & coca -cola in another bowl.


3)      Beat butter & sugar for 3 to 4 minutes on low speed till creamy. Add in eggs , one at a time. 


4)      Add in flour mixture  & alternate with Coca cola mixture. Beat till well combined. 

5)      Divide evenly batter in the 2 cake pans & bake for 30 minutes. Let to cool .

6)      For frosting: Beat liquid cream till foamy, add in sugar & cocoa powder whisk till stiff peaks. 

7)      Melt chocolate & butter on double boiler / bain marie till well combined with smooth shinny texture. 

8)      Assemble cake with whipped cream & topped with melted chocolate. Decorate with Cola candies.

Coca-cola was invented 1886 by an American pharmacist , John Pemberton who introduced Atlanta to what had became the most popular soft drink in the world.

  1. Your cake is "Coca-Cola-ly" hehehe! Looks great, Kit! We once baked Coca-cola cake for our earlier Bake-Along, and we can't taste the Coca-cola either! I think that the taste got lost along the baking process.
    Finished by 8 boys, the cake must be super yummy indeed!
