I’m really
excited for our 15th bake at the The Home Bakers event as we’re baking a fat free
/ guilt free cake aka sponge cake . Mimi of Mimi Bakery House has selected an orange frosted sponge cake & it’s an awesome
choice as now it’s orange season . THB is organized by Joy of Kitchen Flavour
& we will be baking every single recipe from Lou Seibert Pappas ‘s cookbook - Coffee Cakes . My family does not
like sponge cake but I on the other hand
love it very much . It’s more to the
texture of the cake & the subtle flavour that they’re not keen off . They prefer rich buttery pound cake than
chiffon or sponge cake . I was wondering that I can add more flavouring to enhance the taste & the orange syrup
will do the trick too . My family might
like it after all . I mean if they like to eat grainy polenta cakes, why not a
cottony soft spongy cake ! So I’ve baked the full recipe of this cake
& added 1 teaspoon of orange blossom water
which I knew my family would love it .
It turned out wonderfully with nice light , soft cottony texture &
beautiful citrus-y flavour from
the orange blossom . And the verdict was
my family like it especially my boys whose amazed by how light & soft this
cake was & can’t believed that it’s fat free too ! I did not make the frosting as I knew my family will not like it so I've substituted it with an orange syrup using organic oranges . For full recipe please do hop

Joke Of The
Day - When I told my sons that I was
baking a sponge cake, my sons broke into laughter & said “ You mean a
spongebob cake??” I was like “ Huh?!! What?” . My youngest son said “ You know,
Sponge Bob the cartoon !” LOL I didn’t
see that coming !

I've added 1 tsp of orange blossom water in the batter & made an orange syrup for the topping .
To make orange syrup:
2 organic oranges / few slices for topping deco
200g sugar
50 ml water
Directions:
Combined all ingredients in a saucepan & let it simmer for 3 mins . Then add in orange slices & simmer another 3 mins . Let to cool a bit before pouring over cake .

Hi Kit...yes, a very soft citrus cake. My 2nd attempt to.get it perfect. We all loved tis cake too!!! Your sponge cake is perfectly soft as well... love the orange syrup..wat a great idea:)

ReplyDeleteI can see my grandson having the same reaction if I were to tell him I was baking a sponge cake. First he would be in shock because I rarely bake but he sure would be excited at the thought of Sponge Bob either having a nibble or being the guest of honor:)

Kit..your sponge cake is so perfect! Tall, spongy with the right airy texture. I tried making sponge cake and each time, fail miserably. I tried making it 3x ok! It didn't rise at all. Although it is spongy but if there's a contest to make the shortest spongecake, I'd be the winner.. Maybe sponge cakes and me don't get well together but I'm very determine to continue making it until I succeed..muahahhahha!
