Strawberry & Rhubarb Buckle


 Strawberry & Rhubarb Buckle 
Adapted from Recipe. Com

Ingredients :
2 cups all purpose flour
1 cup sugar
1 tsp salt
170g cold unsalted butter
1/3 light brown sugar
1 tsp cinnamon
2tsp baking powder
½ cup milk
1 large egg
1 tsp vanilla extract
3 cups strawberries (hulled & cut in 4)
2 cups rhubarb (trimmed & diced) 
20 cm springform cake pan 

1)      Heat oven to 180°C & grease 20cm springform pan .

2)      In a large bowl, combine flour, sugar & salt .  Using 2 knives or pastry cutter to cut in butter till mixture resembles coarse crumbs . Remove 1 cup to a bowl , stir in brown sugar & cinnamon . Set aside for the topping

3)      Stir in baking powder into remaining flour mixture . In small measuring cup, blend milk, egg with vanilla & stir into flour mixture till moistened . Spread half batter in prepared pan. Evenly cover with strawberries & rhubarb . Sprinkle a table spoon of remaining batter on top . Crumble reserves topping over batter . Bake for 60 minutes till golden brown , inserted in center comes out clean . Let to cool on wire rack . Run knife around edge & remove side . Serve warm or room temperature with cream .

My 1 year old rhubarb is growing wild  in our vegetable patch .

    You are so lucky having lots of space for your gardening. We are living in a townhouse and all our miniature trees are grown in pots :p I love to grow my own rhubarb but got told off my husband that it is mission impossible for us :(

    Nice that I can admire your rhubarb plant and your buckle instead.

    I'm so envious (again!) of your rhubarb! This is one ingredient that I have been wanting to try for ages, but you know-lah, we cannot get it over here. Your cake looks so moist and delicious, with the juicy lovely strawberries, I should say, a total-knock-out!

    i'm sure everyone of us here are so envious of your plants and fruits and flowers each time ! i ve tasted rhubarb once in a cheesecake but kind of forgotten how it taste like! haha! i'm glad to hear that you got to know about buckles thru bake along and more happy to know that you enjoyed eating it!
