Finally winter is here after a loooooog warm autumn . I hope we'll have snow for X'mas ! Anyway while dreaming of snow , I've made this yummy & easy Snowball Cookies which I LOVE eating . Also know as Russian Tea Cake or Mexican Wedding Cookies . You only need 5 ingredinets & no less than 30 mins to make them . I love the buttery , rich nutty flavour & ever so light that it just melts in your mouth .... YUM ! They also look adorable like snowball & VERY adictive too ! LOL
Christmas Snowball Cookies
Recipe from Fifteen Spatulas
Ingredients :
1 cup all-purpose flour
1 cup finely chopped almonds (I've used half almonds & half walnuts)
1/4 cup sugar
1/2 cup butter - softened
1 tsp vanilla extract
1 tsp rum (optional)
For coating:
1 cup of confectioner sugar / icing sugar
Method:
1) Preheat oven to 160°C .
2) Combine flour , almonds & sugar together . Add in butter , vanilla extract , ( rum) & mix well with a hand mixer till cookie dough comes together .
3) Roll into 2 to 2.5 cm balls & place on baking sheet . Bake for 25 mins till the center fully cooked . Set aside for 5 mins & roll in icing sugar till it resembles snowball .

***Winter is finally here & these are the photos taken this morning from garden . I have enjoyed the beautiful bloom of my flowers & roses untill now , in December
Usually roses never bloom till November not to mention December !! This is the very 1st time that they lasted till now .
