Rustic Apple & Brie Bread




This recipe is inspired from the Brie Bread from our local bakery .  The only difference was I've added some diced apples in my rustic bread recipe . This is a dence rustic bread with ozzing Brie cheese .  YUM! Great for brunch with some salad . But I must say that I personally prefer Camembert with apple though ! LOL

Rustic Apple & Brie Bread 
Recipe from I-Lost in Austen

Ingredients:
400g bread flour
1 package of instant yeast
300 ml warm water
150g Brie cheese
2 medium size apples ( Gala or Golden ) 
1 tsp salt

Method:

1)  In a large bowl combine flour & salt . Make a well , add in yeast with water & mix till form a dough . Knead for about 5 mins till smooth . (If it's too handle , add more water ) Let to proof for 1 hour in a warm place or till double in size . 

2) Peel & core  apples & diced 1 apple into small piece . Cut into thick slices the other apple for the topping . 





3)  Punch down the dough , knead for 5 mins & add in diced apples . Knead till all combined & roll it out in a disk & place brie cheese in the center . (You can also remove the outer skin of the cheese ) Wrap bread dough around the cheese & top with sliced apples .  Let the bread to proof for another 30 mins . 




3)  Preheat oven to 220°C . Bake the bread for 35 to 40 mins till golden brown .

French Galette With Cherry Walnut Topping (THB)




I know I've been saying this quite often but anyway this is another keeper recipe that I'm definitely making again . This delicious recipe  was chosen by Lena from Frozen Wings & we (The Home Bakers) are currently baking from Lou Seibert Pappas's cookbook - Coffee Cake  .  The Home Bakers (THB) bake along is hosted by Joyce from Kitchen Flavours .  I'm really glad that I've made the full recipe of this galette as it turned to be very tasty . It reminds me  of brioche with a lovely cherry & nutty topping . My family love this galette very much even my eldest son who was not keen of brioche liked it .  I think that says it all ! LOL I've made some changes in this recipe which was the flour  that I've replaced with bread flour . As you can see from the pictures that it does have the soft fluffy texture  even though I've only kneaded the dough for only 5 mins (I was rushing to fetch my son! LOL ) I've used canned cherries instead of dried cherries & I've also almond flakes to chopped walnut as well . To tell the truth ,  I don't have any almond flakes left in my pantry . Sunflower Seed Pull-Apart Focacia (THB)




This is the #31 bake for The Home Bakers(THB)  event ,this month . This recipe is selected by our organizer & baking buddy ,  Joyce of Kitchen Flavours  . We're baking every single recipe from Lou Seibert Pappas's coobook - Coffee Cake .  Joyce has baked this focacia beautifully shaped even better than the picture in the cookbook .  Being a huge fan of focacia , I was really looking forward for this bake as I'm  intrigued by the shape of this focacia too ! Sounds silly is it ?!! LOL  Thanks to Joyce for step by step tutorial pictures on how to shape it . PHEW! That really save the day ! LOL For full recipe & tutorial HERE . For more this delicious focacia from all the members of THB HERE  I've made the full recipe &  added only 1 cup of room temperature water but still the dough turned to be sticky & difficult to handle even with 4 full cups of bread flour . Finally I've managed to shape it with some olive oil & by 2nd proofing time, it turned out great . I've added more olive oil on the forcacia that it calles after baking , just to give it a more shiny look. I'm quite happy with the end result , looks o;kay ( even the shape was not that even ) & taste delicious  .  My family enjoy this focacia very much . This is another keeper recipe which I'm certainly making again .

Italian Cheese & Herb Pinwheel (THB)







This is another delicious  savoury  loaf selected  by Zoe of Bake For Happy Kids for our 25th THB(The Home Bakers) bake .  This event is hosted by Joyce of  Kitchen Flavours & we’re currently baking from Lou Sheibert Pappas’s Coffee Cake cookbook .  I’ve made the full recipe & since I do not have fresh oregano , I’ve used dried oregano instead & I’ve divided the dough into 4  .  Well, as you can see my loaves  turned out to be kind of rustic ! LOL  Nevertheless they’re very tasty .  I was quite worried when they doubled in size into 4 huge loaves  during the 2nd proofing  !  LOL   This is indeed a hearty loaf  with amazing flavours , great with salad  ! I’m certainly baking this loaf again . Danish Chocolate Streusel – Swirled Coffee Cake






This month , Anuja of Simple Baking has selected this lovely Danish Chocolate Streusel for  The Home Bakers (THB) . We’re are actually baking  from Lou Sheibert Pappas’s cookbook – Coffee Cakes .  This is another yummy recipe & definitely a keeper . 






Danish Chocolate Streusel – Swirled Cake

1)      Beat sugar, butter salt & cardamom till light & fluffy.


2)      Add in eggs & gradually add in flour with milk. Beat till soft dough . Knead dough till smooth & elastic for 10 minutes. Let it rise for at least 1 hour in a warm place.


3)      To make chocolate streusel : rub in butter , sugar, flour, cocoa & cinnamon till crumbs.


4)      . Cut the dough into half. Roll on half into 26 x36 cm rectangle. Spread evenly half of the chocolate streusel filling. Roll up the dough & slice or cut the roll at 2 cm intervals. Spread evenly half of the apple filling. Roll up the dough & slice or cut the roll at 2 cm intervals. Repeat with the remaining dough & filling & place them in a greased cake pan  & cover with tea towels or plastic wrap in a warm room for 1 hour


5)      ) Preheat oven to 170°C . Lightly brush the roll with milk . Place in the oven & bake for 30 to 35 minutes till golden brown.  Let to cool
