Pumpkin Strudel - Strudel à la citrouille

When they came to the steps, leading upwards from the beach, a gentleman,
at the same moment preparing to come down, politely drew back,
and stopped to give them way.  They ascended and passed him;
and as they passed, Anne's face caught his eye, and he looked at her
with a degree of earnest admiration, which she could not be insensible of.
She was looking remarkably well; her very regular, very pretty features,
having the bloom and freshness of youth restored by the fine wind
which had been blowing on her complexion, and by the animation of eye
which it had also produced.  It was evident that the gentleman,
(completely a gentleman in manner) admired her exceedingly.
Captain Wentworth looked round at her instantly in a way which
shewed his noticing of it.  He gave her a momentary glance,
a glance of brightness, which seemed to say, "That man is struck with you,
and even I, at this moment, see something like Anne Elliot again




Pumpkin  Strudel - Strudel à la citrouille

Ingredients:

500g grated pumpkin (remove as much juice as you can)
4 tbsp of dark brown sugar
1 grated Granny Smith apple
30g raisin
2 tbsp of ground hazelnut or almond
1 tsp cinnamon + some for deco
½ tsp ground nutmeg
½ tsp ground ginger
1 tbsp of 4 spice mix
3 phyllo sheets

20g melted butter
1 tbsp sugar
Whipped cream

Directions:


1)      Preheat oven to 180°C . Combine grated pumpkin , apple, brown sugar & all the spices. Stir well till well combined. 

2)      Roll out 1 sheet phyllo, brush melted butter on it & sprinkle with some sugar. Place another layer of phyllo sheet & repeat the same process.

3)      Spoon  ground hazelnut along short of the phyllo sheet as shown below . Topped with half of the pumpkin mixture  & raisin . Add the rest of the pumpkin mixture .


4)      Start with folding the side of phyllo sheets in over filling; lightly brush edges with butter . Starting at the filled side & gently roll up forming a roll. Brush roll with some butter & bake for 35 minutes. Let to cool a little & sprinkle some ground cinnamon & sugar mix for deco. Served with whipped cream




I've added a little maple syrup on my whipped cream . Another weakness of mine besides honey, chocolate & caramel! SWEET

Cinnamon – Apple Walnut Torte

Captain Wentworth had given of him, on his return from Lyme before, his warm praise of him as
an excellent young man and an officer, whom he had always valued highly, which must have stamped him well in the esteem of every listener, had been followed by a little history of his private life,
which rendered him perfectly interesting in the eyes of all the ladies. He had been engaged to Captain
Harville's sister, and was now mourning her loss.  They had been a year or two waiting for fortune
and promotion.  Fortune came, his prize-money as lieutenant being great; promotion, too, came at last;but Fanny Harville did not live to know it. She had died the preceding summer while he was at sea. Captain Wentworth believed it impossible for man to be more attached to woman believed it impossible for man to be more attached to woman than poor Benwick had been to Fanny Harville, or to be more deeply.

Rose & Lychee Mascarpone Cream With Raspberry Entremet

Anne found herself by this time growing so much more hardened to being in Captain Wentworth's company than she had at first imagined could ever be, that the sitting down to the same table with him now, and the interchange of the common civilities attending on it (they never got beyond), was become a mere nothing.




Rose & Lychee Mascarpone Cream With Raspberry Entremet ( Tart sablée à la rose, crème mascarpone litchi et framboise)

Ingredients:

Pink rose & coconut base:
60g Biscuit Roses De Reims (blend till powder)
60g sugar
125g butter ( room temperature)
2 egg yolks
5 cl rose water
20g shredded coconut ( optional)
Pinch of salt

Lychee Mascarpone Cream
200g mascarpone cream
80g sugar
3 eggs
80g lychee puree
10g vanilla sugar
2 sheets of gelatine
500g raspberries

Directions:


1)      Combine flour, sugar, salt , coconut& mix well . Add in butter, egg yolks & rose water & till smooth dough.  Place in a polybag & chill for 1 hours. 

2)      Preheat oven to 180°C Place the dough on a lightly floured surface and use a rolling pin that is absolutely straight. Lightly dust it with flour and place it in the centre of the dough. Roll the dough up onto the rolling pin and gently unroll it over one of the prepared tart pans. Using cookie cutter to cut dough & cover with baking paper . Bake for 30 minutes & let to cool.

  
3)      For cream filling: Separate egg white & yolk . Beat sugar & yolks till creamy & whisk egg whites till stiff peaks. Soak gelatine in cold water.


4)      Heat  3 tbsp of lychee juice & add in gelatine sheet . Stir till well gelatine is fully dissolve. Combine lychee puree & lychee juice with mascarpone cream. Stir well till well combined. Add in egg yolk mixture & stir well . Gradually fold in egg white till combined.

5)      Spoon in cream mixture onto pink base . Topped with raspberry & chill for at least 3 hours before served.

Cherry Coke Cupcakes

While Captains Wentworth and Harville led the talk on one side of the room, and by recurring to former days, supplied anecdotes in abundance to occupy and entertain the others, it fell to Anne's lot to be placed rather apart with Captain Benwick; and a very good impulse of her nature obliged her to begin an acquaintance with him. He was shy, and disposed to abstraction; but the engaging mildness of her countenance, and gentleness of her manners, soon had their effect; and Anne was well repaid the first trouble of exertion. He was evidently a young man of considerable taste in reading, though principally in poetry; and besides the persuasion of having given him at least an evening's indulgence in the discussion of subjects, which his usual companions had probably no concern in, she had the hope of being of real use to him in some suggestions as to the duty and benefit of struggling against affliction, which had naturally grown out of their conversation.




Cherry Coke Cupcakes
Inspired from Brown Eye Baker

Ingredients for 12 cupcakes

¾ cup sugar
½ baking soda
3 tbsp cocoa powder
¼  tsp salt
1-1/2  cup flour
1/2 cup unsalted butter ( room temperature)/
½ buttermilk  or natural yogurt
1 egg
1-1/2 Vanilla extract
¾  cup of cherry coke ( never use diet coke)
Cherry jam
20 cl liquid cream
2 tbsp of icing sugar.
12 cherries
Pink sugar

Directions:

1)      Preheat oven to 180°C & line muffin pan with paper liners.

2)      Combine flour, baking soda, salt, cocoa powder in a bowl & stir well.

 

3)      Beat butter & sugar till light & creamy. Add in egg & beating for another minute.

4)      Combine buttermilk or yogurt, Coke & vanilla extract ( Don’t worry if the mixture looks curdled )


5)      Combined in 4 parts of flour mixture to butter mixture, alternating with Coke mixture. Mix till well incorporated &  thoroughly combined.


6)      Spoon batter evenly in muffin pans. Bake for 18 to 20 minutes till the tops spring back when touched. Let to cool.


7)      Using a pairing knife to cut out a cone shape in the middle of each cupcake. Spoon in cherry jam.



8)      For frosting beat liquid cream till foamy , gradually add in icing sugar. Beat till stiff peaks.  Pipe whipped cream on cupcakes & topped with sugar coated cherries.

Poached Pear with Roquefort Cheese, Chives & Almond






Roquefort cheese or blue cheese is not my favorite cheese , in fact I don’t even like it but my hubby loves it . This is his favorite appetizer , poached pears with Roquefort cheese .  The recipe usually calls for walnut  &  I’ve came across another recipe from the cookbook MasterChef (France) using almond .  A recipe from Baïa , one of the contestant of the first season MasterChef France .  Believe it or not, I’ve tried it, just a little for my blog .  I find that the crème fraiche added has made the Roquefort cheese less pungent &  more creamier  to the taste .  The fresh chives & almonds  gave a more refine taste to the whole combinations  .  Great with some salad ,  edible flowers  .  But I’m still not keen of this cheese yet but I’m curious of how this cheese taste like as a dessert .  I’ve come across a dessert using Roquefort cheese & my hubby is VERY looking forward to try it  !  LOL  Well, I guess I have to give it a try  myself . Never tried ,never know!

The nights were too dark for the ladies to meet again till the morrow, but Captain Harville had promised them a visit in the evening; and he came, bringing his friend also, which was more than had been expected, it having been agreed that Captain Benwick had all the appearance of being oppressed by the presence of so many strangers.  He ventured among them again, however, though his spirits certainly did not seem fit for the mirth of the party in general.




Poached Pear with Roquefort Cheese, Chives & Almond


Ingredients serve 4
4  Conference  pears
200g Roquefort cheese (blue cheese)
100g crème fraiche
50g chopped almond
Handful of chopped chives
Lemon juice

Directions:


1)      Peel, cut it in half lengthwise &  use a melon baler to core ( remove seeds) .


2)      Poached pears in salted boiling water for 2 minute & remove from boiling water . Sprinkle with some lemon juice.
 
3)      Mix Roquefort cheese & crème fraiche till smooth. Add in chopped almonds & chives. Stir well & spoon the cheese mixture on pears.  Topped with some chopped almonds. Serve with salads.
