French Apple Pound Cake - Quatre-quarts aux pommes




Today I’m sharing my  son’s favourite apple cake , Quartre- quarts aux pommes aka French Apple Pound Cake  .   Real easy to make & taste so good . Buttery rich crumb cake with apples slices , just the perfect delectable cake for afternoon coffee break .  This is definitely not a guilt free cake but it's so delicious that I ate half of the cake . Very addictive apple-licious cake  ! LOL

French Apple Pound Cake - Quatre-quarts aux pommes
Recipe adapted from 750G

Ingredients :
150g sugar
150g flour
150 butter –room temperature
3 eggs
2 Tbsp baking powder
A pinch of salt
1 tsp vanilla extract
1 large apple –peeled, cored & sliced (not too thin)
1 tsp cinnamon
3 Tbsp rum (optional)
Light brown sugar

Method:

1)      Preheat oven to 175 °C  . Grease loaf pan

2)      Marinate sliced apple with rum (optional) .  In a large bowl combine flour, baking powder, salt , cinnamon .

3)      Whisk butter till light & creamy . Cream butter & sugar till fluffy .

4)      Gradually add egg one at a time & mix well after each addition .  Add in vanilla extract .



5)      Fold in flour mixture into butter mixture  till smooth & well combined . Pour half the better into prepared loaf pan .  Add layer of sliced apple over the batter . Pour the rest of the batter over & spread evenly  . Sprinkle brown sugar over the top & bake for 40- 45 mins till golden brown .  Let to cool before serve .







Raspberry Popovers




This is another 1st for me , making popovers. I’ve chosen to make a sweet version as we’re harvesting raspberries now .  So why not make the most of it .  




To be honest my popovers did not really do justice to the original version as mine are a little over baked . But nevertheless they’re tasty with  lovely soft custard like texture . Just love the sweet raspberries in this popovers as I’ve added more fresh raspberries . A perfect snack for anytime of the day


Raspberry Popovers
Recipe source from Vintage Mixer

Ingredients : Yield 10 popovers
2 eggs
1 cup whole milk
28g melted butter
1 cup all-purpose flour
1 Tbsp sugar
¼ tsp salt
Zest of 1 lemon
Handful of fresh raspberries

Method:

1)      Preheat oven to 190°C . Grease generously the muffin pan with melted butter . Place muffin pan in the oven to heat it up .

2)      Whisk eggs & milk in a large bowl .

3)      In a separate bowl , combine flour , sugar , salt & lemon zest .  Fold this mixture into egg mixture till well combined . Don’t worry if it’s a little lumpy .

4)      Pour batter into greased muffin pan & filling only 2/3 full . Scatter few raspberries over the top ( you can also mash the raspberries & then fold a spoonful mixture into each cup of batter)

5)      Bake for 35 – 45 mins till puffed & golden . Sprinkle with powdered sugar . (I’ve added more fresh raspberries just before serve )

Chocolate Nugget – Orange Flax Cake (THB)




I love chocolate - orange combo & that is why I’m really excited about this month’s  THB (The Home Bakers) bake . Not only that , this recipe also calls for flax seed cereal .  I’ve never tried flax seed  in bakes before so this is another interesting ingredient .  Thanks to Mich of Piece Of Cake who has selected this healthy flax cake for us to try out  . This event is hosted by Joyce of KitchenFlavours .  We are baking from LouSeibert Pappas cookbook , Coffee Cake .  I’ve only made half of the recipe & in 10 mini cakes .  The cakes turned out great with chocolate chip & nut topping  . We like this healthy breakfast cakes pack with flavours .  Goes wonderfully with a cup of cappuccino …. Irish Apple Crumble Cake




I love crumble cakes & this recipe of Donal Skehan really caught my attention . I've baked this cake few times & even for my son's 18th birthday . He always requests for apple cake for his birthday so this cake fit the bill perfectly .  He like thi lovely soft apple-licious cake with rich buttery crumb topping . I simply love just how moist & flavourful is  this cake , perfect for a tea time break . I can easily eat half of this cake but luckily my hubby & sons finished it before I can have another slice !  Why 'luckily' ??!! Then I don't have to spend another hour to burn all those calories in the gym  !  LOL

Irish Apple Crumble Cake
Recipe from Donal Skehan

Ingredients:
110g butter
150g light brown sugar
2 large eggs
1 Tbsp milk
210g flour –sifted
1 Tbsp baking powder
A pinch of salt
1 Tsp ground cinnamon
300g apples – peeled, cored & sliced ( I’ve diced them)
20 cm cake tin

Crumble Topping
50g vanilla sugar (can be substitude with caster sugar)
50g butter
50g flour

Method:

1)      Preheat oven to 180°C  . Grease & line cake tin .

2)      Cream butter & sugar till pale in a large mixing bowl .

3)      Add eggs , one at a time & mix till well combined .

4)      Fold in flour, baking powder, salt & cinnamon . Blend well till resembles a thick cake batter .

5)      Add in apple slices & mix well till well combined . Pour into cake tin & spread evenly .

6)      For the crmble topping : Combine sugar & flour into a large bowl . Rub butter into the flour mixture using your finger tips to make a breadcrumb texture .  Sprinkle the crumb mixture evenly on top of the batter & bake for 40 – 45 mins till lovely golden brown or till the skewer inserted into the cake comes out clean . Enjoy









Baked Apple With Dried Fruit




An easy autumn dessert that we love to indulge after a busy day . Baked apples make  comforting  & satisfying dessert especially served with ice-cream .  For this recipe I’ve used Granny Smith apples & some leftover dried fruits from my pantry .  The tartness of the apples  blended perfectly with the delicious syrupy filling …. YUM

Baked Apple With Dried Fruit
Recipe adapted from Canadian Living

Ingredients for 4:
1 cup of apple cider
¼ cup brown sugar (I’ve used light brown sugar)
¼  Tsp ground cinnamon
¼  Tsp ground nutmeg
1 Tbsp butter
4 apples (Golden , Gala or Granny Smith )
½ cup mixed chopped dried fruits ( I’ve used raisins, apricots , figs & cranberries)

Method:

1)      Preheat oven to 190°C .  In a small saucepan , combine cider, cinnamon, nutmeg & sugar . Bring to a boil & stir in butter . Remove from heat & set aside .

2)      Core apples almost to the bottom , leaving base intact . Pare off 2 cm wide strip around core at the top ; trim base to level if necessary .

3)      Stuff mixed dried fruit into each apple . Place in a square baking dish & pour cider mixture over the top . Bake for about 35 – 40 mins  . Bake till apples are tender & the sauce is syrupy.








French Galette With Cherry Walnut Topping (THB)




I know I've been saying this quite often but anyway this is another keeper recipe that I'm definitely making again . This delicious recipe  was chosen by Lena from Frozen Wings & we (The Home Bakers) are currently baking from Lou Seibert Pappas's cookbook - Coffee Cake  .  The Home Bakers (THB) bake along is hosted by Joyce from Kitchen Flavours .  I'm really glad that I've made the full recipe of this galette as it turned to be very tasty . It reminds me  of brioche with a lovely cherry & nutty topping . My family love this galette very much even my eldest son who was not keen of brioche liked it .  I think that says it all ! LOL I've made some changes in this recipe which was the flour  that I've replaced with bread flour . As you can see from the pictures that it does have the soft fluffy texture  even though I've only kneaded the dough for only 5 mins (I was rushing to fetch my son! LOL ) I've used canned cherries instead of dried cherries & I've also almond flakes to chopped walnut as well . To tell the truth ,  I don't have any almond flakes left in my pantry . Apple & Lemon Clafoutis - Clafoutis aux pommes et citron




Another French classic treat with a little twist - Apple Clafoutis that I like to share with you today . This dessert usually calls for cherry but you can also replace it with any seasonal fruits even kiwi .  I've tried this recipe from Gourmand magazine a couple of years ago . Love the lemony flavour & the tartness of the apples .... YUM

Apple & Lemon Clafoutis – Clafoutis aux pommes et citron
Recipe from Gourmand Magazine Sept / Oct  2012

Ingredients for 4
3 apples – peeled, cored , cut in quarters & coat with lemon juice
1 organic lemon (zest of  ½ a lemon
4 eggs
50g melted butter
20 ml milk
120g flour 
70g sugar
A pinch of cinnamon
Icing sugar
4 remekins (I've used a 16cm tart pan)

Method:

1)      Preheat oven to 180°C .  Grease ramekins

2)      In a large bowl , combine flour, eggs , sugar , cinnamon & lemon zest .

3)      Gradually add in milk & butter . Mix till well combined .

4)      Pour half of the butter mixture in each ramekin & add in cut apples . Top with the rest of butter mixture . Bake for 20 mins till golden brown . Let to cool & sprinkle some icing sugar over the clafoutis before serve .
