Apple Oatmeal Cookies

Apple Oatmeal Cookies

Ingredients for 3 dozen cookies
1 cup flour
1 tsp baking powder
1tsp ground cinnamon
½ tsp nutmeg
½ tsp salt
½ cup shortening
¾ cup sugar
2 eggs
1 cup rolled oats
1 cup diced apples without peel
1 cup chopped walnuts

Method:

1)      Preheat oven to 175°C . Lined baking tray with baking paper .

2)      Whisk  sugar & shortening in a large bowl . Beat in eggs till well combined .

3)      In another bowl , combine flour , baking powder ,cinnamon, nutmeg & salt . Fold flour in egg mixture till well blended .


4)      Add in apples & walnuts into batter till well combined . Drop dough by spoonfuls about 5cm onto lined baking tray . Bake for 12 to 15 minutes till golden brown . Let cool on wire rack .

  3. Hi Kit, I've used dried fruity in cookies but haven't tried with fresh fruit. These apple oatmeal cookies sure look yummy!

    Do you have to pack lunch for your kids? I remember buying food from the tuck shop at school but the schools in Australia don't sell food daily and so I have to pack lunch and snacks for my boy :D

    Nice cookies! I'm sure that your kids love them as much as I do :D

      No, my sons don't pack lunch for school as we're staying not far , about 10 mins drive . But they like to pack snacks to school , that is why I bake 3 times a week ! LOL
